Have you organised Christmas lunch yet? Here Brand SA Board member and Sprout cooking school Director Callum Hann shares his favourite South Australian recipes and top tips for designing your Christmas menu.

Callum's idea of a perfect South Australian Christmas menu is one that is easy, fresh and delicious, with plenty of in season South Australian produce. Lots of things to nibble on and lots of interesting flavours to try.

He encourages South Australians to buy local produce this Christmas, as you're not only getting great quality and supporting local businesses, you're going to save yourself some dollars as well.

Callum says that Christmas Day doesn't have to be stressful or expensive. He's designed these recipes with ease and budget in mind, so that you can enjoy the day with loved ones, instead of in the kitchen!

Callum's tips for designing your Christmas Menu

1. Keep it simple
No one cares how fancy your Christmas menu is, so don't over complicate it. Christmas Day is not about spending all day in the kitchen (even for a professional Chef like Callum!), it's about spending time with your loved ones.

2. Pre-plan your menu
Figure out what you can do ahead of the day, even if you can't do the entire dish, you may be able to do part of the dish, prepare something in advance, or make a dressing ahead of time.

3. Spread out your equipment
Share the love and space around. Cook something in the oven, cook something on the BBQ, have a room temperature dish and have something that's from the fridge, so you're spreading your equipment around.

4. Buy South Australian produce
Not only will you be supporting local businesses and families, the quality and flavour is going to be second to none. Buying local is also great for your wallet because you're not paying for travel and transport costs. Buying in season, local produce is when the produce is at it's best, and lowest price as well.
